I made myself a lemon herb butter roasted today with boil-then-pan-fried small potatoes with caramelized onions. The inspiration came from The Chew’s lemon-sage roast turkey, well this is almost like theirs but simpler.
Here’s the recipe:
ingredients:
1 whole chicken
1 stick of butter (room temperature)
lemon herb mix (i got mine from wholefoods), lemon pepper seasonings might work
1 lemon
lots of garlic
onions
mini yellow potatoes
what to do:
1. brine the chicken! brining is putting any meat in a bucket of salt water. it keeps the meat tender and more flavorful. let the chicken sit in the salt water and keep it in the refrigerator for at least 4 hours.
2. after the chicken is well brined, rinse it and pat the chicken using paper towel to get as much water out.
3. in a bowl mix the butter and lemon herb mix. rub this mix under the chicken skin and all over it until it is well seasoned.
4. slice the onion, spread on the roasting pan, it makes a bed for the chicken.
5. put the chicken on top of the onion bed in the roasting pan.
6. smash the garlic cloves and put them in the chicken’s cavity.
7. roll the lemon back and forth to get the juice flowing and then cut into halves then put them into the cavity as well.
8. tie the chicken’s leg together with any strings.
9. drizzle the top with olive oil and sprinkle with salt and pepper.
10. roast in the oven in 425F for 1 1/2 hour.
11. voila! if the juice runs clear between the thigh and leg, it’s done. let it rest for 15 minutes to let the juice flowing.
for the potatoes:
1. cut potatoes in halves, boil them in salted water for 10minutes or until they’re done.
2. heat olive oil in a saute pan, put the potatoes in
3. let them crisp a little, sprinkle the lemon herb mix
4. take the caramelized onion that has been roasting with the chicken and put it in the pan. also take the juice from the roasting pan to the saute pan.
5. take out the lemon from the cavity, squeeze the juice onto the potatoes.
6. sprinkle salt and pepper for taste. plate them with the chicken.
